RECIPE: The Best Organic Country Vegan Gravy + Steamed Veggies

THE BEST ORGANIC COUNTRY VEGAN GRAVY + STEAMED VEGGIES Did I mention THE BEST?  The word BEST is not quite even good enough for this RECIPE ~ because it is better than BEST ~ it is the GREATEST HOMEMADE GRAVY I HAVE EVER TASTED ! YES, better than meat gravies that I ate once upon a time in my youth.  Not only is this GRAVY absolutely tasty beyond tasty ~ it is packed with so much amazing nutrients ~ so happy to be sharing this VEGAN GRAVY RECIPE with you today! GATHER * Blender (regular glass blender or vitamix) * Pot or Steamer (to steam veggies) * Another Pot (to boil purified or distilled water)  * Teaspoon Himalayan Sea Salt * 1 Whole Organic Red Onion * 2 or 3 Stalks of Organic Celery * Organic Cashews (1 cup will serve 2 people ~ 2 cups will serve 4 people) *Organic Veggies (I went with Organic Sweet Potatoes, Organic Asparagus & Organic Zucchini) ~ though many folks are going to want this gravy recipe for mashed potatoes or country fried potatoes.   OPTIONAL: Additional plant based trace minerals such as fulvic acid or concentrated liquid magnesium + whatever additional seasonings/spices you like such as garlic or onion powder, dried oregano, rosemary, sage, dill etc.   I personally tend to stay away from garlic, white onion and green onion due to how it can cause “stinkiness” within the physical human body system. THE POTATO ADDICTION Who knew ? Addiction to potatoes………..geeze ! Since I was a child I have always loved mashed potatoes………..it seemed to be a comfort food that everyone loved, everyone agreed with and everyone could eat with no complaints.   As I have walked through my journey of life dealing with various emotional clearing issues ~ when the emotions “hit the fan” so to speak (meaning got super intense with the clearing)…………running to a pot of mashed potatoes seemed to be a way to help manage the upset and settle down.   Over the many years of studying nutrition ~ I learned to make the mashed potatoes vegan style, all organic and taste super delicious (without animal cream & butter)………..the healthiest mashed potato recipe on the planet !!!!   As I never really had hankerings for potato chips ~ for some reason the “deadness” of the potato chips never sat well with me……..though I did eat plenty of the potato chips as a child and teenager……….just not so much as an adult……….what I have come to learn lately is the reason why the programming of the potato chips served with lunch………..meaning a sandwich & chips is one of the most popular lunches out there in America.  Or look at the hamburger and french fry (lunch & dinner programming at almost every fast food restaurant and regular restaurant in america).  Plus there is there is the steak & baked potato programming for dinner.  Oh, and then the eggs, skillet potatoes or hash browns for breakfast………….seems that within our Western society of “traditional meal” programming potatoes are on the menu...

RECIPE: ORGANIC ORANGE SWEET POTATOES This recipe is super simple, amazingly healthy, super tasty and all you need is 3 simple ingredients + an oven bowl to cook in.  This recipe also gives you an nutritious alternative for sweet potatoes rather than the traditional butter, brown sugar and marshmellow recipes (an overload of not such good sugar).   GATHER: *2~3 Large Organic Sweet Potatoes Or Yams (dice into small square bite size pieces) *1/3 Cup Organic Olive Oil *4~5 Medium Size Organic Oranges (juice these oranges so you have the fresh orange juice) PREHEAT OVEN TO 400 DEGREES Add your organic sweet potatoes to the bowl ~ then pour your 1/3 cup organic olive oil over the sweet potatoes ~ then pour your fresh squeezed orange juice over the sweet potatoes until all sweet potatoes are bathing in the OJ/olive oil sause.   Place in oven for 1 hour and 20 minutes ~ stir your sweet potatoes every 20 minutes as they cook in the oven so sweet potatoes on top don’t end up too dark ~ you want to keep a rotation of different sweet potatoes getting a little browned on top during each 20 minute cooking interval.  Allow to cool for a good 5 minutes and serve.   Much Love & Healthy Eating,...

RECIPE: HEALTHY GREEN SOUP

HEALTHY GREEN SOUP * 4 Medium Organic Zucchinis   *1 Cup Fresh Organic Green Beans *1 Organic Onion (chopped) *4 Large Organic Cloves Of Garlic (chopped)  *1 Cup Organic Celery (finely chopped ~ don’t miss this finely chopped point, otherwise you will end up with strings of celery in your soup)  *1 Cup Fresh Organic Parsley (finely chopped)  *2 Teaspoons Of Pink Himalayan Sea Salt  and /or Crushed Black Pepper *For those who like a thicker soup ~ add chopped organic potatoes or organic sweet potatoes (around 2 cups) *For those who have the sage or rosemary therapeutic essential oils on hand ~ you many want to add a few drops of either rosemary or regular sage (not clary sage). *  Add all ingredients into a large pot filled with purified water.  Bring to a boil.  Boil for 15 minutes and for those who added potatoes boil for around 25 minutes.  *  Then pour all ingredients into a blender ~ blend for a couple of minutes until it becomes a smooth puree.  Makes around 4 bowls of healthy and delicious soup.  In-Joy !   Love,  Catalina  PS.  It is fun to experiment with other vegetables too such as broccoli, cauliflower or kale.  Other herbs you may want to experiment with are dandelion, rosemary & sage.  Have fun...

ORGANIC LEMON TAHINI DRESSING * 6 ORGANIC LEMONS ~ to make 3/4 cup lemon juice * 1 CLOVE ORGANIC GARLIC ~ pressed or crushed * 1 CUP ORGANIC TAHINI * RAW ORGANIC COCONUT NECTAR OR RAW ORGANIC AGAVE ~ 3 Tablespoons * 1/2 CUP ORGANIC OLIVE OIL * 1/4 ~ 1/2 CUP PURIFIED WATER Mix all ingredients into blender ~ you may need to add more agave/coconut nectar to your specified taste as some people like the dressing sweeter and some like it less sweet.  You may also need to add more or less water as the dressing should have a nice thick and yet liquid flow to it.
