Recipe: Vegan Organic Cream Of Zucchini Soup

ORGANIC VEGAN CREAM OF ZUCCHINI SOUP

THINGS TO GATHER

* 3 TO 4 ORGANIC ZUCCHINI (Steam Separately)

* 4 ORGANIC CLOVES OF GARLIC

*1 SMALL ORGANIC VIOLET ONION

* 1/4 CUP OF FINELY CHOPPED ORGANIC CELERY

* 1/2 CUP OF RAW ORGANIC CASHEWS (Pre-Soaked For A Bit~ soak at least for 1/2 hour)

* 1 TEASPOON OF ORGANIC SAGE SPICE (Or Fresh Sage Leaves)

* 1 TEASPOON OF ORGANIC ROSEMARY DRIED SPICE (Or Fresh Rosemary)

* 1 TEASPOON OF PINK SEA SALT

* 1/4 CUP OF FRESH ORGANIC CILANTRO (Finely Chopped)

* 1 TEASPOON OF ORGANIC THYME SPICE (Or Fresh Organic Thyme Leaves Or A Couple Of Drops Of Organic THYME Essential Oil)  

PREPARATION

* STEAM ZUCCHINI SEPARATELY

* SOAK CASHEWS FOR AT LEAST 1/2 HOUR OR MORE

* BOIL 3 TO 4 CUPS OF PURIFIED WATER WITH CELERY, ONIONS, GARLIC AND DRIED SPICES (PINK SEA SALT AND DRIED HERBS) FOR 20 MINUTES 

* IN BLENDER COMBINE SOAKED CASHEWS & VEGETABLE BROTH (Celery, Onions & Garlic + Dried Spices) ~ BLEND THIS REALLY, REALLY GOOD !  

THEN ADD YOUR STEAMED ZUCCHINI + FRESH HERBS TO THE BLENDER (Cilantro……..Thyme, Sage and/or Rosemary if you were able to gather them fresh).

This is a 1/2 cooked and 1/2 raw soup for a warming fall/winter easy vegan meal that is delicious and nutritious.  It is great for the taste buds, physical body for those who are not fully raw yet are conscious healthy vegans.   You don’t have to be vegan to enjoy flavorsome vegan meals !
